Seasonal produce is undeniably one of my favorite parts of the summertime. Lately, I have been on a serious cherry kick. They are not only are they packed with delicious flavor, but also incredibly nutrient dense. A serving of the fruit offers a healthy dose of antioxidants, vitamin C, potassium, folate, and fiber. Research indicates that tart cherries may even have an anti-inflammatory effect that reduces muscle soreness after exercise, making them a great addition to an athlete’s diet.

Cherry-berry crumble cherries.While cherries are perfectly delicious on their own, they play a starring role in my easy Cherry-Berry Crumble recipe. The best part? This treat is as nutritious as it is delicious. Cherries and blueberries join granola and almonds for a healthy dose of antioxidants, whole grains, and heart-healthy fats. Refined sugar is replaced by a touch of honey to complement the natural sweetness of the fruit, while granola offers a delicious crunch with more nutrition than a traditional crust. Serve it with a small scoop of vanilla gelato for the perfect summer dessert, or pair with Greek yogurt for a special brunch dish.

Easy Cherry-Berry Crumble

Ingredients

1 lb. cherries, pitted (frozen also works well, thaw and drain first)

1 pint blueberries, washed and drained

¼ cup plus 2 tablespoons honey

2 tablespoons orange juice

2 tablespoons flour

1.5 cups of your favorite granola (1 used Kashi GoLean Crisp! Toasted Berry Crumble cereal)

½ cup slices almonds

2 tablespoons flax seed meal

1 tablespoon butter, melted

Preparation

Preheat oven to 350 degrees Fahrenheit. In a large bowl, combine cherries and blueberries. In a small bowl, stir ¼ cup of the honey and orange juice together. Add flour and wisk until smooth. Pour honey mixture over fruit and toss ingredients together until fruit is evenly coated.

In a separate bowl, combine granola, almonds, and flax seed meal. Stir together the melted butter and remaining 2 tablespoons of honey. Pour honey mixture over granola mixture and toss ingredients together until granola is evenly coated.

Spray a square baking dish with nonstick spray. Spread fruit mixture in dish. Bake for 20 minutes. Remove from oven, sprinkle granola mixture evenly over fruit, and bake for an additional 10 minutes or until golden brown. Cool slightly before serving with gelato or yogurt, as desired. Enjoy!
