No doubt about it, nachos are football playoff staples. What’s not to like? Crispy chips, crunchy peppers, savory beans, tangy cheese, spicy salsa. The question is, can you get true nacho enjoyment without eating (or serving) a heart attack on a plate. We at AthleticFoodie think the answer to that question is a resounding YES! Organic (unsalted) backed nachos (low fat) with stripes of steamed kale and pumpkin cubes, seasond with black pepper (and/or curry) and topped with shredded swiss cheese/vegan cheese.
Sprinkle with minced walnuts.
Serve with sour cream or silken-tofu seasond with herbs.
For non vegetarians: Add some roast beef slices.

Organic (unsalted) backed nachos with (dried) tomatoes, olives and artichoke hearts topped with buffalo mozzarella. ->Oven
Then add bell pepper, jalapeños, red onions and zucchini.
Serve with aioli and/or pesto.

@Garrett How about some pumpkin, spinach and salmon nachos? or pumpkin, mango, chili and chicken breast?
I dare you to try out sweet nachos. I recomend pumpkin, appel, raisins and hazelnuts with vanilla- or cinnamon sauce. It’s important to use unflavored and unsalted nachos/chips!

I’ve never been a fan of the mango/chili combonation, but have tried a lot of sweet nachos I liked! Apples and Cinamon Tortilla chips (easy to home make)…bake the apples…I’ve liked.
As far as more traditional nachos…I take baby steps. Ground Turkey instead of beef (can’t tell the difference once you’ve put the spices on), and unsalted chips (can’t tell the difference once you’ve put the cheese, beef, etc. on) are my baby steps.
