One of the great reasons to appreciate winter being over is you can plant your garden.. Cherry tomatoes are easy to plant, grow and will be plentiful. You don’t need a lot of space. They can be grown in a pot on your back porch. All they need is some sun and water and before you know it you will have an abundance of small and delectible red succulent tomatoes and “oh so sweet.” Use them in cooking or just pop them into your mouth. They come in many varieties and sizes. Plant yellow and red for color, round or oval.
They are nutritious because they are a great source of lycopene which is a powerful anti-oxidant with many health benefits. The easiest way to get it is by eating tomatoes.. and…they taste great. Americans get around 80% of their daily intake by eating tomatoes or products made from tomatoes such as ketchup, red spaghetti sauce and salsa. And oh, by the way, most people don’t even realize that tomatoes aren’t vegetables at all, they are considered a fruit. So if you or your kids don’t like vegetables, just tell them they are eating fruit.
You don’t have to be a gourmet chef to create a tasty dish. Toss them in a salad, roast them on your grill, cut them in half, add some fresh green beans, mix up a little balsamic vinegar, seasonings and a little oil or just about any spices and “voila,” a dish of your own. Or maybe try this recipe.
